8 chicken drumsticks
¼ cup sweet chilli sauce
2 teaspoons soy sauce
¼ cup coconut milk
2 tablespoons lemon or lime juice
1 – 2 tablespoons chopped fresh coriander leaves
2 tablespoons roughly chopped roasted peanuts or cashews
Marinade chicken for 3-4 hours (or overnight) in the fridge.
Drain marinade and reserve.
Place reserved marinade in small pan, bring to the boil and then reduce heat and simmer till slightly thickened.
Serve as an accompanying sauce with the chicken.
Garnish with extra freshly chopped coriander.
