Pre-heat oven to 180 degrees C.
Finely grated rind of 2 lemons
1¾ cups sugar
1 cup canola oil (or other unflavoured oil)
1 cup natural yoghurt
4 tablespoons lemon juice
½ teaspoon salt
2 cups flour
2 teaspoons baking powder.
In a large bowl beat together the first 7 ingredients. Then add and beat in flour and baking powder.
Pour into a 23cm tin lined with baking paper.
Bake approx. 35 minutes.
