Try this simple almond-flavoured fresh apple cake. It's perfect for dessert or with a cup of coffee.
Preheat oven to 180°C.
Mix melted butter, eggs, sugar and almond essence and beat well.
Stir in flour and baking powder.
Spread two thirds of the mixture into a paper lined baking tin.
Arrange thin apple slices over the mixture and top with remaining mixture.
Bake for 1½ hours, then remove and let cool.
Dust with icing sugar and serve with freshly whipped cream.
