Besieged with over-ripe bananas? Make this yummy banana cake with a sliced almond topping. For dessert, serve it slightly warm with whipped cream or Greek yoghurt

Banana Cake with Sliced Almond Topping

 125 g Butter
 1 cup Sugar
 2 Eggs
 3 Bananas
 2 cups Flour
 2 tsp Baking powder
 ¼ cup Milk
 2 tsp Butter
 ¼ cup Brown sugar
 ¼ cup Sliced Almonds
 ½ tsp Cinnamon

Preheat oven to 180°C.


For the almond topping, melt butter and combine it with the rest of the topping ingredients. Set aside.


For the banana cake, place softened butter, sugar, and eggs in a food processor. Process till smooth.


Add bananas and process until well combined.


Add flour and milk and pulse until flour is just mixed in.


Pour cake batter into a paper-lined 20cm round cake tin. and smooth it out carefully.


Sprinkle with the almond topping and bake for 45-55 minutes.


Cool in the tin, turn out and dust with icing sugar.
