NZ green lipped mussels with a chilli coriander dressing. Prepared in minutes, they are nutritious and delicious, hot or cold.
Scrub mussels and de-beard them.
Place in microwave dish and microwave on high for 5 minutes. Discard any mussels that do not open.
Break off top shell and discard. Arrange mussels on a serving platter and spoon over coriander chilli dressing.
Heat vinegar until almost boiling.
Remove from heat and stir in garlic, salt, sugar, chilli, ginger and coriander. Leave to cool and spoon over cooked mussels on the half shell.
