Lemon and yoghurt cake dusted with icing sugar

Lemon Yoghurt Cake

Moist lemon & yoghurt cake, so easy to prepare. And it makes a great dessert too. Just add some fresh berries and top with whipped cream or Greek yoghurt.

 finely grated grind of 2 Lemons
 4 tbsp Lemon juice
 1 ¾ cups Sugar
 1 cup Canola oil (or other unflavoured oil)
 1 cup Natural or Greek Yoghurt
 2 Eggs
 2 cups Flour
 2 tsp Baking powder
 ½ tsp Salt

(This is also delicious made with oranges or limes)

Preheat oven to 180°C.

In a large bowl beat together everything except the flour and baking powder.

Once mixed, beat in flour and baking powder.

Pour into a 23cm tin lined with baking paper.

Bake for approximately 35 minutes.
