Lemon Cake

Pre-heat oven to 180 degrees °C.

Ingredients

(This is also delicious made with oranges or limes)

finely grated grind of 2 lemons
1 ¾ cups sugar
1 cup canola oil (or other unflavoured oil)
1 cup natural yoghurt
4 tbsp lemon juice
2 eggs
½ tsp salt
2 cups flour
2 tsp baking powder

Method

In a large bowl beat together the first 7 ingredients.

Add and beat in flour and baking powder.

Pour into a 23cm tin lined with baking paper.

Bake approx. 35 minutes.
