
Roasted Pear, Bacon & Blue Cheese Salad
A delicious salad, entree or lunch dish. (If blue cheese is not to your liking, replace it with brie, camembert or grilled halloumi).
For the dressing: Whisk all ingredients together till smooth and creamy.
Store unused dressing in a lidded jar in the fridge.
For the salad:
Cut unpeeled, cored pears into 8 slices and place in a roasting dish. Drizzle over a little olive oil, sprinkle with chopped rosemary and finely sliced garlic clove. Bake approximately 20 minutes in a moderate oven (180 degrees C.) or until the pear slices are soft.
Fry chopped bacon in a dry pan until crispy. Set aside to cool slightly
On a serving plate layer salad greens with the blue cheese slices, bacon pieces, nuts and roasted pears. Drizzle over the honey mustard dressing and serve immediately.
Optional: Serve with sliced toasted sourdough bread or ciabatta
