
Upside-down Plum Cake
A plum cake you can prepare in minutes. Swap out the plums with poached apple slices, apricots, peaches or fresh berries. Serve it as a dessert (don't forget the whipped cream) or with coffee.
Line a 20 cm. round baking dish with non-stick baking paper and lay plums cut-side down on the paper
Preheat oven to 180 degrees C.
Beat the eggs, milk and vanilla well with the sugar
Add to the flour and baking powder and stir to combine
Mix in the melted cooled butter until the batter is smooth. Pour the batter carefully over the plums
Bake for 45 minutes. Let cool on a wire rack and turn out onto a plate with the plums facing up.
Serve for dessert with freshly whipped cream or enjoy a slice with coffee.
